Asian Cucumber Salad
This is a very flavor able recipe that is great on a hot summer day. It’s a great addition to hamburgers and sausages cooked on the grill. It’s even great as a topping on your sausage. The other great thing is that it’s super healthy for your health conscience people. Yummy!
Ingredients :
1 Cup Cucumber (thinly sliced, peeled)
1/4 Cup Red Onion, (vertically sliced)
1 Tablespoon Rice Wine Vinegar
1/2 Teaspoon Sugar
1/2 Teaspoon Fish Sauce
1/8 Teaspoon Chile Paste with Garlic
Preparation:
- Combine all ingredients by tossing well.
- Cover salad and chill at least 30 minutes.
Cooking Tip Cucumber
Before you cut up the cucumber taste it. The skin may be bitter. If this is the case you can peel it then slice. The salad still tastes wonderful without the skin on it.
When you are at the market make sure that you select very firm cucumbers. They last in the fridge generally up to 4 days so if you are shopping and plan on making the salad at a later date you want to make sure you still have a good cucumber.
